The juices in the marinade tenderizes the pork so that it melts in your mouth.
Diet Type: Low Carbohydrate
Ingredients:
  • 1 pound boneless pork loin, trimmed
  • 1/3 cup orange juice
  • 1/4 cup fresh lime juice
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano, crushed
  • 3 cloves garlic, minced
  • Serves: 4
    Cooking Time: Over one hour
    Instructions:
    Place pork loin in a plastic bag in a shallow dish. Combine orange juice, lime juice, sugar, oregano, and garlic in a small bowl; pour over pork. Seal bag. Refrigerate overnight, turning the bag occasionally. Preheat oven to 350 degrees. Drain meat, discarding marinade. Place meat on a rack in a shallow baking pan. Insert a meat thermometer so bulb is in center of pork. Sprinkle with salt and pepper and roast for 45 - 60 minutes or until thermometer registers 160 degrees. Let stand 5 minutes before slicing.
